Marinated Vegetable Salad | tailgating

tailgatingHere’s a quick night before the game-day salad. Just toss together and chill. It’s a healthy alternative to all the chips and dips and it tastes great too!

1-16oz package fresh broccoli and cauliflower florets
1-16oz package cherry tomatoes
1-15oz can chickpeas, rinsed and drained
1-6oz can ripe black olives, drained and sliced
1 cup slivered snow peas
3 green onions, chopped
1 medium carrot, cut into thin strips
1 small red bell pepper, chopped
1/2 cup olive oil
1/3 red wine vinegar
2 garlic cloves, chopped
1 1/2 tsp chopped fresh basil
1/2 tsp salt
1/2 tsp sugar
1/4 tsp pepper

Garnish: fresh parsley spring

1. Combine florets and next 7 ingredients in a large bowl.
2. Process oil and next 6 ingredients in blender until smooth: add to vegetables, tossing to coat.
3. Cover and chill for 5 hours.
